This is a simple way to make a great vegetable side dish or as a main course.

In this episode, I’m using Cauliflower, Carrots and Zucchini (three of my favorite vegetables).

Cut your vegetables into small pieces (size will vary – its your preference).

Pour about 1/4 cup Olive Oil over the veggies (it may take more Olive Oil if you have a lot of veggies)

Salt & Pepper to taste

Add other spices i.e. Penzey’s Bavaria, Italian Seasoning, Garlic (fresh) – whatever you want on the veggies.  Mix well.

Place the veggies in a large pan and then into an oven set to 350º.  Cook for 25-45 minutes.

Cooking time will vary with the amount and/or thickness of the veggies.  The cooking time can be determined by how crunchy you want your veggies.

After coming out of the oven, plate the veggies and have a great meal.
