Puttanesca Sauce, known my many as a sauce for their Italian food, may not have no idea of what Puttanesca roughly translates to. Are you ready for this – Puttanesca roughly translates to “Lady of the Night”. In other words, the sauce of the whores. Yes, this makes me laugh and you will hear me say this in the video. A little fun fact about food.

Check out “The Sordid Store of Puttanesca” https://www.thrillist.com/eat/nation/the-sordid-story-of-puttanesca-the-prostitute-pasta-sauce. This will give you a more in-depth history of this sauce.

In this video, my fried John Di Pietro, was born in Italy. He spoke Italian until the age of 5. He was around his grandmother and she is the one who taught his to cook.

As John prepares and makes the Puttanesca, he talks about how the regions of Italy make things. A lot of the food is region based and honestly, it doesn’t matter what region you are from or learning from, the teaching of how to cook will be great.

Remembering when I cooked with my grandmother, she had certain ways of preparing things. She learned from her mother and grandmother. When John talked about his grandmother and his time of growing up in Italy, it brought back great memories for me and my grandmother.

We filmed this in John’s kitchen. It was done in one take without any edits. Its funny, there are people that you want in your kitchen to help and people you don’t. We are two people that can work well in the kitchen together.

Ingredients:
1/4 cup olive oil
3-4 minced garlic cloves
1/3 cup of Kalamata Olives pitted and halved
2-3 tbsps. of capers
3 flat anchovies or 1 and 1/2 teaspoons of anchovy paste
Pinch of red pepper flakes
Pinch of oregano
3-4 fresh basil leaves
28 ounce can of crushed tomatoes

Sauté garlic in oil until translucent; add anchovy paste, Olives; tomatoes, and rest of ingredients…bring to the boil, reduce and simmer for 25 minutes. Both sauces are enough for a pound of Linguini, or Spaghetti or Capellini pasta.

This video is the same as the Marinara Sauce. John made both sauces at the same time.

John was so easy to work with. We will be creating more video’s, so stay tuned.
