Shredded Chicken in a Crock-Pot

I found this recipe on Facebook.  Now, I can be adventurous in my cooking, so I saw this recipe as a challenge.

There are four ingredients and that’s it.  Chicken, salt, pepper and your favorite salsa.  That’s it, nothing more.  After placing the 3 lbs of chicken, salt, pepper and salsa in the crock-pot or slow cooker (as some call it), turn it on and leave it alone.

Cooking on high will have the chicken done in 4 hrs.  On low, it would be 8 hrs.

This meal is versatile in that once the chicken is done, you can

  • eat the chicken breast as is
  • shred and have chicken tacos
  • shred and have enchiladas
  • shred and place on a hamburger bun
  • place shredded chicken in a frying pan and crisp the meat
  • place the shredded chicken in a pan and place under the broiler for a few minutes

When deciding to make this for a meal, you get to chose the salsa.  How spicy the salsa is will determine the spiciness of the chicken.

Not only is this a great meal to have, but any left overs freeze well.  Just make sure that you put the meat in a container that is completely sealed with air spaces.

3 lbs of boneless, skinless chicken breast
1 16oz jar of your favorite salsa
Salt
Pepper

Cook on high in a Crock-Pot for 4 hrs. or low for 8 hrs.
