Butternut Squash is somewhat of a funny looking vegetable. The outer skin looks tough but it provides it with a self contained baking dish.

Peeling the Butternut Squash is easy with a potato peeler. Once peeled, cut it in half, scrap out the seeds and you are ready to cook it any way you like.

Cutting the swash can be difficult because the squash is a dense vegetable. Make sure that you keep your fingers out of the way of the knife. Losing a finger isn’t a fun thing.

Cut the squash in half or quarters (your choice) then each half or quarter into slices. Once cut, place everything in a large bowl, add olive oil, salt, pepper and any other seasoning that you want (I use Italian seasoning).

Preheat your oven to 350ยบ. Once at temp, place the squash on a baking sheet, single layer and place in the oven.

Cook for 20-25 minutes. The squash is done when a fork easily goes into the squash.
