This is a very easy recipe that can feed several people a great meal for a great price.
Preheat over to 350º
Using an iron skillet, heat some oil in the pan. As the oil is heating, season the chicken on both sides (you can also season when the chicken is in the pan). Start browning the chicken on all sides.
When the chicken is browned on all sides, add in the veggies and canned tomatoes. Lift the chicken up so that the tomatoes will get under the chicken. Cover with foil and place in the oven.
Cook the chicken for 30 minutes and check to see if it has reached an internal temperature of 165º. Depending on the thickness of the chicken, it can take as long as 40 minutes to cook this meal.
While the chicken is cooking, consider putting rice on to add to the meal. I like Saffron rice from Mahatma. But, choose the rice of your liking or other vegetable that you would like to have for this meal.
Skillet Chicken with Veggies
2-4 chicken breast (skinless)
Salt, Pepper and any other seasoning that you want to use
1-Bell Pepper
3-Carrots (peeled and sliced into 1.5″ – 2″ pieces)
1- 28 oz can of Chopped Tomatoes
