This is a modified version of Ina Garten’s Engagement Roast Chicken.
This is a wonderful meal to have with your family and friends. It can be made in a baking dish or a cast iron pan. Its a healthy meal with great flavor and its Keto friendly.
Preheat the oven to 350º
Ingredients:
- 1 Lg. Yellow Onion
- 1 Red Bell Pepper
- Radishes (European – Red & Round)
- Chicken (boneless & skinless). Your choice of breast or thighs
- Kerrygold Irish Butter
- Salt & Pepper
- Olive Oil
- Lemon(s), sliced
Directions:
Peel the onion and cut in quarters. Break the onion apart into smaller slices
Remove the seeds out of the Bell Pepper. Slice into thin strips
Depending on the size of the radish, you can leave whole or slice
Put 2 TBSP of olive oil in the bottom of the pan. Add the sliced onion
Place the Red Bell Pepper and sliced radish on top of the onion
Place the chicken on top of the veggies, season with salt and pepper
Place the sliced lemons on top of each piece of chicken
Place three to four pats of better around the pan
Cook for 30 minutes at 350º
