1 pkg Yellow Cake mix
4 very ripe banana’s (at least 1 cup mashed)
1 Tbsp Vanilla
2 eggs
1 cup chopped nuts
Preheat oven to 350º
Using a mixer, place one banana at a time into the bowl so that it will be mushed up. After all the banana’s are in the bowl, making sure that they are mushed. Add the vanilla, then one egg at a time. Make sure to incorporate the vanilla and eggs before adding the next item.
With the mixer on low, start adding the yellow cake mix. Mix well. Add in one cup of your favorite nuts (pecans, walnuts, roasted almonds).
Pour into one large loaf pan or two smaller pans.
Bake for 45 to 50 minutes. Using a skewer or butter knife, place it in the center of the bread, going until you hit the bottom of the pan. Pull the skewer or knife out. If it comes out clean, the bread is done. If not, go for another 5 minutes and recheck.
There have been times when I made this recipe and the mixture was “dry”. Add in one more egg to help bring the mixture to a better consistency. The banana(s) being too ripe can cause the “dry” mixture.
Let cool, cut, enjoy as it is or add butter to it.
This is a great treat to go with your coffee/tea or as a side to your breakfast, lunch or dinner.
If you like chocolate chips, you can add one cup of semi-sweet chocolate chips to the recipe. Cook as above.
